Whipped Feta Dip
Hummus is out, and feta is in! This bright, tangy dip is a delicious pair to some roasted artichoke hearts, vegetables, and pita.

            Ingredients for 4-5 Servings
- 
    8 ozfeta cheese, crumbled
- 
    1/3 cupmayonnaise
- 
    1/3 cupsour cream
- 
    1 tbsplemon zest
- 
    2cloves of garlic, minced
- 
    1 tspsalt
- 
    1 tsppepper
- 
    1/2 tspdill
- 
    1/2 tspthyme
- 
    1/2 tsporegano
- 
    1/2 tspred pepper flakes
- 
    2 cansartichoke hearts
- 
    Olive oil
- 
    Paprika (optional)
- 
    Fresh thyme (optional)
- 
    Parmesan cheese (optional)

Method
-             Preheat the oven to 275 degrees. Cover a large baking sheet with parchment paper and set aside.
-             Drain and pat artichoke hearts dry. Toss in olive oil, ½ tsp salt, and ½ tsp pepper, then lay out on the baking sheet. Cook for 15-20, until golden brown on each side.
-             In a large food processor, add feta, mayonnaise, sour cream, lemon zest, garlic, salt, pepper, dill, thyme, oregano, and red pepper flakes and blend until smooth.
-             Place in a medium-sized dish and garnish with olive oil, paprika, fresh thyme, and parmesan.
